If I get this BS611 and a PID can I cold smoke or will I have to purchase something else?

You can cold smoke in it. They sell a cold smoke adaptor or you can make your own.

Yes you can!  I have an OBS...I don't use the PID.  I put a pan of ice in the bottom.  Only use the puck burner.  I'm sure others that have that model will respond.  Where I live it's to hot after mid March to do it this way...so I usually don't.  Others have also rigged up their own cold smoker boxes.

I have one myself and IT IS EXACTLY LIKE THE OLD BLACK. Like Mike said, just buy the cold smoke adapter and you are ready to go!!! No real need for pid for cold smoking unless you are looking for an accurate temp.

Just a thought on cold smoking anyone tried to convert a dorm fridge into a small cold smoker box?
