Title: Kosher Casings?

First off, please forgive my ignorance.  Secondly, anyone know of a kosher or jewish safe casing?  Wife has a friend that's a jewish vegan that wants to try some chicken sausage.  If worse comes to worse I figure just use the fibrous casings and then peel.

Make sure chicken is on her diet, if she is Vegan she doesn't end any animal products, including eggs and dairy.

Other than fibrous (synthetic) there are a couple of things you can do. If you are not overly concerned with plastic wrap, you can form the sausage into logs, seal them in Saran Premium Wrap, twist the ends tight. Then poach them in 160 - 180° water until done. Or you can purchase the 23mm Vegetarian Collagen Casing  (http://www.sausagemaker.com/27801vegetablecollagencasings23mm.aspx) that sausage maker sells. I have them, but haven't gotten around to using them yet.

If she is a Vegan you may want to take a look at this recipe.

Most of the ingredient can be found in regular supermarkets. Some things like nutritional yeast, and Bills Best Chik'Nish Seasoning (if the store doesn't have it, tell them you are looking for a seasoning that imitates the flavor of chicken). Make sure you check out the video.

Thanks Habs!  She's willing to "try" a chicken sausage since she's not vegan out of some moral/dietary reason.  She is however very strict on her jewish beliefs.  I'll present the options to her and give it a whirl.  Thanks for the recipe and link.

If you look at the bottom of the recipe, they also mention using muslin or tea towel as a casing. The vegetarian collagen casing are vegetarian and vegan friendly, but I don't believe they are kosher.

If you have "Charcuterie", by Ruhlman & Polcyn; they have a turkey sausage with dried tart cherries that is excellent. If you can't find dried tart cherries, then don't make it. I once made it with dried sweet cherries and was very disappointed.
