Title: First cold smoke

So I bought a couple cracker barrel cheeses a couple weeks back, just waiting for a chilly morning.
Well this morning was perfect at 48*. The tower temp never went higher than 70*
Here's what went in:

Tough part is going to be letting these rest for a couple months.

Good Luck Slowpoke, they look good! My first cheese looked OK but everyone said they tasted like an ashtray :-[ :-[ :-[

How much smoke did you apply and how long did you let the cheese rest?
