Title: 8lb or 2 x 4lb
Post by: amigo smoker on April 24, 2012, 08:57:31 PM
Well im just gonna go and light the smoker up
i have an 8lb shoulder / butt to put in, i was wandering if i cut it in half would the 2 cook faster than the 1 at 8lb

i was working on 1-1.5 hrs per pound, obviously 8x1.5 is 12
so would the 2 at 4 lb take 6 hrs or there abouts, i know timings are not set in stone.

or would it still take as long as it will still have 8lb of meat in total

cheers all

Once your smoker gets up to your set temperature, it will take less time for the butts to cook if you cut them in half. There are a few members who have cooked them that way, and they reported they obtained good results. My concern doing it that way is that you will loose too much of the converted collagen, which could make for a dryer pulled pork; but as I stated earlier, those who have done this reported good results.

Since you are trying or going to try different techniques, you should start keeping a log to record your smokes. The below link is a good log for the Bradley:

If time is an issure then yes you can cut them in half and reduce the time it takes to finish. I prefer to do them whole but have cut them many times to save time. There are some benefits to cutting them in that you get more surface area for the smoke and rub so you end up with more bark to enjoy. It can be less moist but if you bag/foil them when they hit 160 to 170 F, put in a splash of apple juice or beer and finish to 200 or so, FTC for an hour so so and you will end up with more juice than you know what to do with.
