Went to the local farmers market (a new one in our area... very small but cool) .. and this guy was selling Heritage Breed Pasture raised hens -- about 4 lbs .. lady who I couldn't resist.. .so SMOKER time! :)
Here she is dressed in kill -- simple canola oil and Penzy's 3000 BBQ .. I had some damn CarolinaTreet but forgot! Doh!

Out of the smoker (1 hour apple -- 1 hour cherry) ... and onto my grill (with grill grates) for a quick crisp ...
