This was my 2nd smoke in my New OBS. Words can't described how good this meal was. I put two chicken breasts in a basic brine (water + .25 cup kosher salt + .25 cup brown sugar) for an hour [then soaked in cold water for 30 minutes], then pounded them flat and laid down a piece of provalone cheese and stips of red onion, bell peppers and minced garlic. Rolled it up and wrapped it in bacon, secured with 2 toothpicks each. Dusted with homemade chili powder. Smoked with hickory for 2 hours and then cooked to IT of 165.
