I have to say thanks to Redjada for sparking my interest in this and OU812 for posting the original idea. I had some cheese stuffed Jalapeno peppers in the fridge, so I decided to start with those. Wrapped in Prosciutto as per Josbocc suggestion, then butterflied chicken breast, followed by bacon. Smoked for 2 hours with apple at 230F, another 45 minutes and IT hit 169, so out they came. These guys weighed over a pound a piece, had to split one between the wife and I, served with homemade Quinoi salad. The heat of the Jalapeno just permeated the chicken, it was incredible. And the proof.
