Title: Boneless Leg of Lamb

Made this a few weeks ago and just now getting around to posting the pictures. 

I got a boneless leg of lamb from Costco and decided to cook it in the smoker for dinner, then chop up the leftovers and make a stew the next night.

I followed a recipe that posted on this site about a year ago. Basically you make a marinade of olive oil, garlic, soy sauce, Pomegranate juice, salt, and pepper. I took the netting off and placed the lamb in a ziploc bag with the marinade to marinade overnight.  Then the next day I took out the lamb and wrapped it up tight with high temp cooking bands.  Then into the smoker at 210 with special blend until lamb reached 135, it ended up taking about 4 hours and I applied smoke for the first three hours.

Wow, that looks great and done the way I like it. Medium Rare I would wager.

That looks excellent, thats what the wife is talking about doing for christmas. Nicely done Zueth!!
