Title: Pork Loin wrapped in Prosciutto

Cooked up a Pork Loin a couple of weekends ago.  I got a Pork Loin from Costco and cut in half, freeze one half and with the other half I made of paste of garlic, olive oil, rosemary and thyme and rubbed that all over the loin.  Then I wrapped the loin with prosciutto and let it set in the fridge for about 1 hour.  Then I put it in the smoker at 220 and smoked/cooked with Apple for 3 hours, then continued to cook until IT of 145, which took about 1 additional hour.  Next slice and eat.

That has gotta be soooooo gooood!

I need to find me some prosciutto,,,,got a couple different hunks of loin that needs a cookin  ;)
