Title: Jan's rub on cheese?
Post by: Toker on February 22, 2013, 11:38:43 PM
Hi, i have a question: in my area, they sell BBQ cheese (basically BBQ rub on cheese) but i don't know the recipe so i thought using the famous Jan's rub as BBQ rub on my cheese then smoking it. Does my plan sounds good or would you use an other rub instead? THX

Frank, I have seen people dusting their cheese with "seasoning"

and I believe it might have been Nepas.

If he doesn't respond to this post, shoot him a PM.

I would try a small piece.  What could it hurt?  I've smoked cheese then pressed in coarse pepper.  Next time I smoke cheese I will try seasoning first.  It sounds so doable....and you can't go wrong with Jan's rub!

My plan is to apply the rub a couple of days before wrap it to make sure the rub stand on the cheese then, smoking it and a couple of weeks to rest. My only fear is the salt inside the rub, i hope it won't make the moisture inside the cheese escape. But first, i need to get all the ingredients together.
