I just bought my 611, just got done seasoning it and want to smoke trout recently caught. I soaked the trout in brine solution for 24 hours and would like to know how long to smoke them for. I have 5 trout all around 3/4 of a pound. What temperature should they be? Do i rotate the racks? should I add any other seasoning to the trout? Any help would be greatly appreciated.
