Title: Pulled the trigger

Well I haven't posted in quite some time due to work but have occasionally checked in to see what was happening. Well today I pulled the trigger and ordered some dry age bags from UMAi in opens of trying some cured meats. I have a beautiful piece of elk I was thinking of turning into brasola. Anyone have any recipes worth trying? I want to build a curing cabinet but thought this was a way to get my feet wet.
