Title: BBQ Sauce
Post by: ListerD on May 17, 2006, 05:51:09 AM
I found the base recipe on he web and have been tweaking it over the last few weeks. If you give it a try let me know what you think and any changes you made.

Wet Stuff:

Mix in a large pot

34 oz Catsup
8 oz. hot water, use to rinse catsup bottles
8 oz white vinegar (or apple cider vinegar for a smoother touch)
2 oz balsamic vinegar
3 tbsp molasses
4 dashes worchestershire
1 oz Tobasco (do NOT use any habanero based sauces!)
2 oz mustard - plain old mustard

Put "wet stuff' in a LARGE pot, put heat on "high" by the time it is approaching a boil, you can add the "dry stuff"

Dry Stuff:

Into a large bowl, dump and mix:

2 oz chili powder
2 oz black pepper
2 oz garlic salt
1/3 cup - sugar
10 tbsp brown sugar
1 tsp onion powder

Stir - swirl around till it looks like a chocolate tar (blackness will depend on how much molasses you added).

Once all the stuff in the pot is coming to near boiling add the dry stuff into the pot.

Stir enough to make it evenly liquid...bring to a boil and immediately lower heat to a simmer.

Simmer 30 minutes, (stir fairly often to avoid sticking/burning)...

After 30 minutes remove from heat - don't turn off the burner and leave it there, remove it from the heat source - stir well and bottle it up once it's been cooled to about room temperature.

ListerD;
What grade of balsamic vinegar are you using. I have really expensive and medium priced. Hate to waste the good stuff in a sauce if I don't have to. I'll try to make some next weekend.

It's plain. Nothing super high grade, besides - why make a $100 oz BBQ sauce?  8) :o

ListerD

Thanks for the recipe... I got to try it.  But that BBQ sause that Iceman makes/ sell has got my vote.

Good to see ya back posting. Don't stay away so long the next time.

Oh what do you think of Pinger stating that he is older and slower now? Too funny uh? Yesterday's bad ares is today's victim~~ LOL! That is why I do sniper wars... just too @#$%# old to do it with a 15 year old unless I'm 800 yards out. BTW what are you gaming now? You seen the promo for BF2142 yet? Looks like a kick ares team game play. I still do GR1 as I was not impressed with GR3 yet.  I'm hoping the Modders can bring it up to speed.

Someday we need to either smoke something together or bleed together.

Haven't done much gaming at all lately. A couple games of Tribes2 with Napalm but that's about it.

Ping is Ping, nobody will ever change that guy!  ::)

You could do the radio show with me (see Bluecheese burger thread http://forum.bradleysmoker.com/index.php?topic=3228.15) some time.  ;D We could talk smoking!

Ya we need to do that talk show one day. This is the second time you have suggested it. Give me a couple of months as now I'm just getting back to being on spot.

Some here think I have a ego... Chit they have not seen anything until they have spent some time with him. Don't get me wrong I like Pinger, but what a pain in the shorts he can be.  However,  as he is aging the gap between us is getting smaller.  In fact in sniper wars I don't think he can beat me now.

Now I'm not trying to take anything away from him. On Zcrossroads he was  only one of two bomber pilots out of the hundreds I game against that could give my turret a problem going through the mountains. I could never figuer out how he did it... Considering the turret climbed faster and could turn faster everytime I looked back he was on my butt--it was scary. Ya the bomber would move faster but given its limitions to this day my hat is off to him.   l don't know if you gamed BZ but only him and Skull drove me Nuts-O on that map. The rest were child's play... Poof~~!

Just to tell you how much as a turret pilot I was the KoV gave me this log in: (I will not give it all) 1badassturret.   ;D
Cya and hope we can get together soon.

Well Iceman sent me some. I really liked it. Next he sent me some more so I could give to a corporate office of a major food chain I do business with.  I have no idea what he sells it for.

Quote34 oz Catsup

Forgive my ignorance..... not something I have heard of on our side of the pond. Is it just (tomato) ketchup?  :-[

Yes.

You could also start with plain tomato pasted too, but you'll most likely need more sugar. It's something I intend to try soon.

Thanks

When I try it that way I will.

Right now, I've got an 8lb ham in and a small brisket (point).
