Hey guys,
Question.. I found a recipe on another forum for smoked salmon that said to start smoking at 100 degrees. But the lowest I can see the digital smoker going - even when only using the smoker unit and not turning the oven on at all - is 120 degrees.
Am I missing something here?

You can get these low temp using a cold smoke adapter and a PID controller. Or just The pid and leaving the smoke generator off.
You can start your process at the 120 F and it will be just fine. He actually got that recipe from this site.

A PID controller is use to controll your element with more precision than the regular smoker temperature controller. That's pretty cool! But I have the digital smoker... Seems like this unit is better suited to the OBS. This can be used for the Digitals, too?

Yes a pid controller is used on both units. It will keep your temp + or - a few degrees. Even with the digital model without a pid you will get large temp swings.
