Cut up a pork butt several days ago, seasoned and cured for tasso. Put the pieces on the Bradley today along with 2 racks of chicken breastess. Should be ready about 8pm tonight. I do a lot of chicken and then vacuum seal and freeze to use for chicken salad and smoked king ranch chicken. Tasso's going into beans, jambalaya and whatever I think of
