Title: Artic butt

Keep the vent wide open and don't let the wind blow on the smoker. If you are getting down to the wire pull it from the Bradley and finish in the oven.

Minnesota here. Going to do 2 butts this weekend. Just keep door shut except to empty pan and rotate. Keep out of wind and like Quarlow said keep vent open. It will take maybe 20 hours depending how long the stall will be. The last one I did had a 5 hour stall.

Any suggestions on oven temp?Smoker doesnt want to go above 150 the butt is at 161 IT.Also any suggestions on a1000watt element think its time to replace the old one.

I usually go to 225. Is your vent wide open? If not that will keep it cool in there from  the moisture not escaping.
