Title: My First Seafood - Salmon Filets

So, today was my first seafood.  I love salmon, so I was really hoping this would turn out.

I soaked the salmon in milk for 20 minutes.
Pulled from milk, patted dry, arranged on foiled rack.

Used my "special" seafood rub, then topped with 1 full lemon's juice.

Into my 6 Rack Digital over Aldur for 1 hour 40 minutes.

Straight to plates for dinner.  Perfect color and flakiness.  Reviews were universal.  Great!
Only heard 1 complaint..."why isn't there more?".

You don't want to completely cover a rack with foil in the Bradley.  Covering a rack with foil can trap smoke, heat and moisture in the tower.  That is not a good thing.  The trapped heat can increase the possibility of a fire and the trapped smoke can back up into your smoke generator effectively destroying it over time.

That salmon looks great. 
When I smoke my fish, I use frog mats to keep it from falling through and somewhat makes for easier cleanup. You will find them handy for many other items as well, such as smoked almonds, etc.
I bought mine from Yard & Pool.com.
