Title: Chicken Wings - Cryovac and Fry

Hi

Anyone have experience,  smoking wings in the bradley then cryovac sealing until they are needed on the day, then deep frying them before serving?

Im sure its fine just wanted any tips or hints?

I have never tried this but ... if you bought the chicken wings fresh(not previously frozen) then cold smoked them not exceeding 40F and froze in vac wrap, thawed and fried on a future day I don't see why this wouldn't work.  It's best to keep the chicken out of the 40F-140F range for health safety reasons.  I'm not sure how you'd hot smoke them and then vac wrap without inviting some bacteria.
