That did it!  No leftovers tonight.  I'm pulling the tenderloin out of the freezer now.  Absolutely fantastic! (As usual)  Glad you like the 611.  :) :) :)

...the recipe needs a little more work for authentic Montreal smoked meat but it's close...  8)

Looks like maybe your brine didn't corn the brisket all the way through.  I'll bet it's tasty though!

...it was tasty alright...I just think a bigger brisket brined longer would do the trick...  8)

Looks great, have to agree with Larry, it looks like some additional brine time would have helped it.

...thanks Smoker John...but as KyNola and Saber 4 pointed out,that brisket could use a little more work...  8)
