Title: how to smoke Bison?

Hello, we just 'found' Bison, lovely meat and now we want to try smoking it(we are new to this type of cooking as well.  Any suggestions at all? Thanks, Jenn

I can only get bison either ground, cut into steaks or made into hot dogs

Anything for Deer or Elk will work for bison.  I have eaten my share of Bison (I had a buddy with a Bison ranch) and it is allways lean unless you are looking at maybe that little bit of fat around a New York or Ribeye.  Maybe try cold smoking some of the steaks before throwing them on the grill?  Just to get a little smoke flavor in them?  Or how about this, cold smoke a big chunk and then make some Carpachio.  I LOVE BISON CARPACHIO.  I am amaized I never thought of doing this before.  I bet an ever so slight hint of smoke would be great.

Ground bison is perfect for use in ABTs, especially because it is so lean.  I bet you could make a terrific bison brisket using the standard beef brisket recipe, though I would be inclined to add some cheap bacon to the rack above the brisket just to keep it from drying out . . .
