Title: First smoke

I picked up a used Jim Beam 4 rack on Craigslist today so I went and picked up some chicken quarters. Everything worked great and tasted great but the skin was awful.  Is there a better way to crisp the skin.   I smoked for 3 hours at 210 and finished in oven for 15 at 425*.

throw it on your grill for a few minutes after the bradley

Hi pooch897;

Welcome to the forum.

You can also cook them in the oven for a longer time, just take the chicken out of the Bradley when the chicken reaches around 155°F. Or smoke/cook as you did, and put them under the broiler, skin side up, and carefully monitor them.

Agree with Gus Robin few minutes on the grill and you have got the best of both worlds.
