Post by: Oldman on July 16, 2004, 12:56:38 AM

Olds,
I was reading Smoke and Spice and noted that, although they have recipes for all of their rubs and marinades, they do recommend one off the shelf - Lawrys Mesquite w/ Lime. I have not tried it yet, but if they recommend it in their book, I will be trying it...soon![:p]

Not me Olds, but I would imagine a marinade or brine that would break down the tissue or something to tenderize it would work well - maybe a citrus type??  I dunno, I've not cooked a flank steak in ages.

Good luck with it.

Olds-I have one at home that I will post later today.  Includes soy and rosemary.  Have only used it on the grill, never in smoker, but wife loves it.  Also have a garlic and scallion potato pancake recipe that goes with it.

Stole it from epicurious.com.  Works better if you let marinate overnight.  Good luck.

1/2 cup soy sauce
1/2 cup olive oil
4 1/2 tablespoons honey
6 large garlic cloves, minced
3 tablespoons chopped fresh rosemary or 1 tablespoon dried
1 1/2 tablespoons coarsely ground black pepper
1 1/2 teaspoons salt
1 2 1/4-pound flank steak

Mix all ingredients except steak in 13 x 9 x 2-inch glass baking dish. Add steak and turn to coat. Cover and refrigerate 2 hours, turning occasionally.

Welcome to the Forum, David!  Hope you visit us often and share more experiences with us.  BTW, I noticed you're from Galway NY . . . where is that?  I'm putting together a North East BSer group that would just get together once in a while for some fun and food (OK, maybe a few brewskis, too) and wonder if you're interested . . .[8D]
