I made some more Canadian bacon sticks last weekend. I had some leftover ground meat and was thinking about what to do with it. I came up with the following idea.
I boiled some eggs, allowed them to cool down and peel.
I took a little of the Canadian bacon mixture and flattened it out. I put an egg in the middle of it, then formed the Canadian bacon around it to make a 'ball'.

I put them in the Bradley for two hours at 225 using Hickory.'

They look good. They obtained a nice mahogany color. The only thing I can add, is "hard boil" the egg in the Bradley instead of water. :)
