I just cured a pork loin for back bacon and I just tried a piece to test the saltiness. It was very good just that way so I am asking if I can skip the smoking process and just slice and freeze. It is nice to be back no computer and health problems. A hello to everyone. Thks Piker

Yes! Of course, you will have to cook the slices prior to eating them. When I make peameal bacon, I do not smoke it or cook it until I am ready to consume it. I slice it and freeze it for later use.
