Title: SCOTCH EGG TIME!
Post by: mwilliams7967 on August 20, 2015, 11:00:59 AM
If anyone hasn't tried these it is a must! Making 14 of them for friends and family for a weekend beach trip.
A quick rundown: boil eggs (make more than you think). I use Jimmy Dean loose sausage, usually maple and hot sausage. I'll make hamburger size patties, drop some brown sugar in (http://images.tapatalk-cdn.com/15/08/20/0636fd54e83daf5f2b3500b619d255f2.jpg)(http://images.tapatalk-cdn.com/15/08/20/674c79d12397dd121a7b743837eafe60.jpg)(http://images.tapatalk-cdn.com/15/08/20/55c478e414d9670336dfe25140f095ee.jpg)them and wrap an egg. Now here you can do a couple of things. I will roll the scotch egg in various different flavored rubs.  This time I've breaded them with the rub mixed in. When breading I coat with a raw egg!

those look very good  question do the eggs seem to dry out some while the meat cooks and would it be better to be closer to a soft boiled egg

They are good! However, I'm trying that next time. I've done these numerous times, and love them like this. But wanna try to soft boil them on he next round!

Those look great. We make these over the holidays, only we fry them. How long did they take in the Bradley?

Looks good. Do you care to share the recipe and how long did you smoke them and at what temp?

looked these up on utube. some use a soft boiled egg and they look good. it seems the best way to cook the eggs is  bring to a boil 1/2 to 3/4 inch water in sauce pan  place the eggs in gently and cook/steam for no more then 6 min.  place under cold water to cool completely and then peel. looks like it works

I bet these would be good using ground beef instead of sausage.

I agree, it would be a change to the flavor profile. different spices can be cooked at the same time   aaah so many options        also must add sauce pan needs close fitting lid
got a load of riblets in the smoker now getting close to table time, but i'am home for a few days and I think scotch eggs are on the menu for tomorrow or Monday.

I think the one we do uses half ground beef and half Italian sausage. I think just beef would probably be great.

these are done with  1/3 pork sausage ( plain old breakfast sausage ) 2/3 ground beef  pinch of nutmeg, pinch of cayenne pepper. I did 6 eggs app.3.5 oz of meet per egg  21 oz total. eggs were soft boiled/steamed which works well as the egg was not dried out after smoking. rolled egg in flour-wrap in meat mixture-roll in flour again-dip in egg wash-roll in bread crumbs. smoker at 225 used special blend (1 hr.) left in smoker total 1 3/4 hr.  felt it was not quite cooked enough because of the added pork so fired into the oven at 350 for extra 1/2 hr preheat included in time. mixed honey mustard and mayo to use use a dipper. I will try different spice blends on these cause I think the options are endless. wife and number 3 daughter think they are great (me too). I don't know if straight beef will hold together when wrapped around the egg, a binder will most likely be needed. mix and match the meat combo and spices.  these will get done here on frequent schedule
