Title: Jerky

Was looking for some nice beef to make jerky. Found a cab inside round cut. Just under 11 kilos (24 lbs). 30% off and it still cost 85 bucks. I bought it anyhow so i can fill the fridge and feed my herd come the holiday season.  Trimed the fat off and sliced in strips. Got 19 lbs of meat. Used a hi mountain kit mixed and sat for 24 hrs. Smoked and dryed. The meat was very moist. Got 8 1/2 pounds of jerky. Only a third of what i started with. Its good just a few lbs shy of what i was hoping to get.
