 please does anyone have any good recipes for salmon candy.. i used to have one ,however i lost it . i thank you in advance

Smoked candied salmon

-1 L. Maple syrup
-2 L. Honey
-2 Kg.Demerara sugar
-3/4 cup course salt ( kosher )
-1/2 gallon water
Plus spices of your choice,i.e. Crushed peppercorns, ginger .... Or ???
Worked out really well ....
But the brine is a bit expensive

   thank you for the recipe very much ,that's right on , very similar to the one i used to have however lost ,lol.now i just to go and wait till i can get some more salmon. yea my old one was very expensive also ,,2 jugs of maple syrop bottle of wine various others syrops and some honey also mixed with dem brown sugar . but however very good .

My guess you probably needed to let them soak. Depending on what type of fish and how thick the fillets are makes a difference of how long to soak. The thicker fillet needs more soak time.
