Title: Beef Jerky?

Before I research this too deeply, thought I would post to those of you in the know -

Can anyone post a beef jerky recipe that results in long lasting, won't go stale, jerky?

My daughter has severe IBS, and I make all of my own rubs and such so she can eat BBQ (low FODMAP diet means no onion, garlic and a host of other ingredients...)

I would love some assistance in tracking down a recipe that I can modify for her eating pleasure. I just need the stuff to last, like the store bought stuff.  My initial google-fu found a couple recipes, but they were for the type that needed to be eaten quickly, refrigerated, etc...

Any help much appreciated!
