First time I've tried cold-smoking salmon so I went with Spyguy's recipe. This turned out really well, I can't see myself hot-smoking salmon again. The texture and taste are very nice. I've never had the pleasure of corresponding with Spyguy on this forum, but thanks Mitch.

Kimmie love Salmon, me I'm more of a catfish and hush puppy guy.. ;)
Bet she would love it, may need to try for her one day
Looks good, I haven't tried cold smoking salmon.
My first try a Lox with spyguy's recipe. It has a nice color and texture, not too salty and no fishy taste

That looks great Willy, did you give it any smoke? I've really enjoyed this recipe, I keep trying to think of different dishes to use the fish.

It got 2 1/2 hrs of apple so the smoke flavor is quite mild. I gave most of it to family and friends but kept enough for two breakfasts of bagles, cream cheese, capers and thin sliced red onion. Very tasty
