I did up 2lbs. of mussels Fri. morning (steamed),then shucked them and into the fridge to cool.I set up the cold smoke adapter to the Bradley and smoked the mussels for 40 min. with Apple wood.Put them back in the fridge to cure over night.Sunday they go into the File Gumbo Atlantic Canada style.Haha
That gumbo sounds delicious.
