Title: Cleaning Your Smoker

Hey Folks..

Should I or Shouldn't I clean my Smoker..

My thoughts are is if I do clean my smoker I take away all the flavour that has accumalated over the year. 

I use a mild soap and warm to hot water and I noticed that my Salmon didn't turn out as good but then just now I was wondering about bacteria issues. I've never had any problems thus far with that. I do clean my racks after every use tho as well as the temperature probe and seal of the door and vent at the top of the smoker.

What are your thoughts.

I clean the door seal, racks , v tray,and water bowl after every smoke. I also use a bunched up piece of newspaper to wipe any accumulated loose, flaking  "stuff" off the walls as required. That's all I do.
