Title: Smoking my first turkey
Post by: codyop12 on November 22, 2016, 07:25:42 PM
Hey All!!! So I just got my Auber PID and my extra element hooked up and I am wanting to tackle a Thanksgiving turkey (crazy I know).  I already have a brine picked out and the Turkey is thawing in the fridge. I have been reading a bunch on how to smoke one but still a little confused. I did read that if you want a crispy skin then to put in to oven to finish it off. I don't mind the rubbery skin but the rest of the family might. So my turkey is 13 lbs and my question is how long do I put in the smoker and how much smoke? And about how long in the oven to finish it off? I was wanting to get the timing right so the bird was done around noon. Thanks for the advice!!!! HAPPY THANKSGIVING!!!!

Did a 12 pounder a few weeks ago.  Three hours of apple smoke.  Total time of about 4.5 hours at 250F.

I strip the rubbery skin off the finished bird and present at the table fully sliced.  If I was doing presentation slicing, I'd definitely crisp the skin just before serving.
