Title: potato soup

as I posted elsewhere, I just finished smoking a pork loin using Hab's recipe. When I was slicing it, wife asked that I cut the ends thicker, 1/4 inch, which evened things up nicely. She then diced those pieces up and added them to her version of potato soup. In the past she has used bacon.

This being a recipe in progress topic, I felt this was approiate since her soup recipe is a recipe in progress. We have been married for over 30 years and each pot is a new experience. Today's version used the canadian bacon pieces, quartered red potatoes, onions, milk, left over mashed taters for thickening, some diced green bell pepper with common seasonings, salt, pepper,,,

The smokey flavor from the pork added much to the soup, more so than store bought bacon. I am having visions of smoking some onions and using some of those as well but realise too much of a good thing can be a disaster.

Sounds good jim. So do you saute the onions first or just throw everything in together and simmer all afternoon. Also, what proportion of milk and water?

Nance said there is no official recipe for her soup. She has never measured anything for it.

The onions and bell pepper are sauted with the bacon before adding milk (no water) and pre boiled potatos. She adds left over mashed potatos to make it thicker.

It is one of those "whatever is available" things. The last batch she had some small red potatos so those went in, sometimes a few carrots, same with the bell pepper. I am not crazy about celery but that makes an appearance at times too. If we have some, ground clams but then it becomes clam chowder. Salt and pepper to taste.

I may make some when the fall weather gets here. I may substitute instant potatoes as a thickener. Thanks again.
