Title: Ham ?
Post by: uplandpointer on December 24, 2016, 09:35:54 AM
I cold smoked a store bought ham yesterday. Then I shrink rapped it and stored I fridge to be cooked (reheated and glazed) tomorrow. Well the flew bug has seamed to hit our house and I do not think we are going to have a dinner get together. By shrink rap I mean I took glad wrap and covered in all directions and than took 4" shipping stretch wrap and went to town securing the glad wrap. Do you think I can freeze it this way for a later date or should I cook slice and package for later?

You did a good job securing the wrap, but I would add a layer of aluminum foil, and wrap it as tight as you can. Plastic wrap when it is cold tends to loosen and create air pockets that cause freezer burn.
