Well I've been lerking around here for awhile but I just decided to register. About 3 weeks ago I bought a 4 rack digital along with extra jerky racks. It works fantastic, maintain temp fine. My first smoke was 4 racks of ribs. They turned our great, falling of the bone tender. I've been working on jerky lately. I've done 3 - 5 lb batches so far. One with whole muscle  meat and the other two using extra lean ground beef. I've made jerky before using a dryer and I always used whole muscle meat. Actually I'm fairly impressed with how the extra lean grond beef turns out. All I can say is I've made 15 lbs and it's gone. :'( :'( :'(

Anyway I just thought I would say hi and thank you guys for all the knowlege in the various posts.

Welcome to the forum Mr Walleye, you seem to have settled into to using your new DBS very well! ;D
