  Hello all, nice forum! So I'm brand new to all this and have what is probably a dumb question. I plan on smoking some cheese tonight as we are having some nice cold temps and I do not have a cold smoke attachment. Can I turn on my smoke generator with out turning on the heater element to help keep my temp down to that 85ish range? I have a new Bradley original 4 rack bs611. Thanks!!!

Using the smoke generator alone should work. I have the digital model and can do that as well. On the digital setup if I unplug the tower it will throw things off and there is a loopback plug I use for the cold smoke adapter, not sure how the original will respond but you can always give it a try.
Just make sure to rest your cheese approx 2-3 weeks before eating for it to mellow -otherwise it will taste awful.

I would also put a bowl of iced water in the smoker. It works well for me. I only use the cold smoking attachment when temps outside are above 4C. I'm UK based.
