Hey has anyone in there experience used cod fish for lox? even hot smoked it? I have probably 100 lbs + in the freezer so I wouldnt mind trying something with it.
We usually have a meal of fried cod once every couple of weeks but the season is soon approaching so I'd like to use this up.
I have smoked Lings before.
If it were me I would likely try to lox it, rather than hot smoke it.
But I guess you have the luxury of trying a lb or two of each method and then proceeding with the rest if it meets your taste approval.
If I were closer I would have been happy to work up multiple small batches for you as samplers
Murmer how did the ling cod turn out? Dry or moist? I hot smoked cod a few years ago in my cabelas cabinet and it was as dry as Alberta air in the winter lol
If you were closer I'd give you as much cod as you could handle lol
