I have had to order my bullies from Fiesta Foods as no butcher in my area will sell just a few the like three or four. They want you to order 65lbs.


Update 4 slabs 27lbs to hot today to start the cure 103f will wait till the morning to start.

Fortunately there is a store within driving distance that generally has bellies for sale. If you want the whole belly it is best to call first, before they cut them into 1-2 pound sections. Sometimes they have to order it, and it takes a couple of days. When you do order you can ask to have the spare ribs attached. But I've learned my lesson on that. They charge the same per pound, whether or not the ribs are attached. Also the Sam's Club in my area sell Swift Premium bellies, 3 - 5 pound sections, but I don't particularly care for them.

Do you have any Asian markets in your area? They generally will carry bellies.
