Hey everyone,
Been a while since I last posted but still have a read on what y'all are doing!
I'm going to make a small batch of weiners tonight using Cellulous casings. My plan is not to use the smoker but to add a bit of liquid smoke, and cook these weiners in a hot water bath at 155f . I've never used these casings so my question is will this medthod work?

I've made weiners twice using 25mm cellulose cases, both times I left them in the water bath too long and they got over cooked. They taste good but the consistency is not good.You'd think I'd learn the first time. The small size comes up to temp very quickly and it's  easy to over do them. Next time I'll use a larger (hog) casing.The nice thing about the cellulose is they peel off easily when the weiners cool.
