Title: Polish rings

Hey everyone new to the form not quite sure where to post this I am looking for details and ingredients to make Polish sausage mainly would like to use deer and pork shoulder for the meat also  The big challenge is I am allergic to pepper and anything spicy. Also would like to know temperatures and length of cooking any help and input would be greatly appreciated  I just bought my Bradley smoker this last weekend it is a digital 6 rack thanks again for the help and input.
