Title: Slicing Bacon

My pork bellies are going to be done tonight, should I pull from smoker and wrap in Plastic wrap and let sit in fridge overnight before I try to slice? Will be using a knife.

I haven't made bacon, but your strategy sounds right to me.  Chilling the bacon should firm it up so it slices more evenly.  If it slices hard, maybe let it warm up a bit and see how it goes.

I put them in the refer to let them bloom and to firm up.

Since I have a dedicated fridge, all I do is take them off the smoker to a tray, then to the fridge overnight. They'll get chilled, lets the bacon "rest" and I'll slice up the next day
