Title: Using Freezer Packs in a Smoker

Hi :-) I'm cold smoking at the moment, and I'm noticing that the Bradly is still heating up (about 25 degrees c). I've tried using the ice in the drip tray method, but I'm noticing loads of evaporation/condensation. I was wondering if anyone had tried using freezer blocks? (The gel packs that are covered in plastic). In my mind, this should solve my issue... but I was wondering if there would be any issues? As there is a small amount of heat I was worried about the plastic.

Hi LincolnSmoker, I've cold smoked cheese and with the main heating element OFF the temperature still climbed. A lot has to do with the outside temperature and your bisquette burner heating up, which slowly raises the temperature in your smoker. I've used a large tray with ice filled zip lock bag to reduce the condensation. Give it a try. When done you can either reuse the bag or throw it away.

If you keep it under 38°C (100°F); you should have no worries with the plastic of the gel packs. I use them often for cold smoking, and I always put them in sealable freezer bags so I don't have to clean them off after.
