Title: Burnt ends using a pork butt
Post by: TMB on June 04, 2018, 11:15:08 AM
Anyone ever make burnt end using a pork butt?

If so would you cook fisrt then cut into chunks then recook?   Or would you cut the butt up into 1 inch cubes then cook?

I've made pork belly burnt ends, but not with pork butt.  I used skinless bellies and cut them into 1" cubes, seasoned, and smoke/cooked until tender. Remove from smoker, place them in an aluminum pan, sauce them up and continue to cook until the sauce caramelizes (single layer; making sure you leave a little space between pieces). Remove from the smoker, and hit them with some finishing rub. It would probably be the same method using pork butt.
