Title: My 2nd try at nuts

Last sunday I tried a few more nuts and this is what I got.

Smoked Cashews
1.13   Kg.   Kirkland Roasted Whole Unsalted Cashews
3   T.   Sea Salt
3   T.   Brown Sugar, Packed
2   T.   Chipotle Powder
¼   C.   Jack Daniels/Maple Syrup   2 T. each

Grind salt in a spice grinder till fine.
Add remaining dry ingredients and grind till well mixed.
In a large bowl toss nuts with the J.D. till well moistened.
Then toss with the spice mix.
I placed them on 2 racks.
Covered rack with single layer of cheesecloth
then placed magic mat on it.
Gave them 2 hours & 30" @ 220 with apple pucks.
After they cooled I vacuum sealed them.
Got 8 bags with about 1 cup in each.

Smoked Almonds 2
1.36   Kg.   Kirkland Whole Steam Pasteurized Almonds
4   T.   Sea Salt
3   T.   Brown Sugar, Packed
2   T.   Chipotle Powder
¼   C.   Jack Daniels

Grind salt in a spice grinder till fine.
Add remaining dry ingredients and grind till well mixed.
Did this in my small food processor.
In a large bowl toss nuts with the J.D. till well moistened.
Then toss with the spice mix.

When they were first out of the smoker it was hard not to eat every last 1 of them.
Sunday I will be giving them another try. After a week of blooming I'm afraid
I might become a fully bloomed addict!
