Title: How much cheese in 10 lbs of brats

Well, after years of searching for high temp cheese where i live (Edmonton ab) i have finally found some.  Now, having never used this before, what is a good amount to put in a 10 lb batch of smoked bratwurst? Im really stoked about trying this cheese but don't know what works so any advice from the veterans would help alot.

Meat to cheese ratio of 5 to 1. 10 lbs meat = 2 lbs cheese. Curious if the cheese you bought was pre-cut into cubes? I also put some cubed jalapeƱo peppers in mine for a little heat and nice colour .

Yes the cheese was pre cubed. (thankfully). Jalapeno peppers hmm.....  :D

Did my 10 lbs of brats, they turned out great. You can definitely taste the cheese, its stronger than i thought it would be, really cheesy taste.  The 5 to 1 seemed about right. If i was to do snack sticks that you eat cold the 5 to 1 may be a bit much. I would probably reduce it about 1/3rd. For a sausage you grill or cook its fine.
