Regulates the temp in the Bradley within a couple of degrees. Your Bradley smoker will be like a brand new smoker with one.

I us mine all the time. You can program it to run various temps for various times. When I make sausage I usually preheat to 160 for 1 hour then down to 130 for 1 hour then 140 for 2 hours then 160 for 2 hours then 165 until sausage hits 152.

Can you set for lower temps for cold smoking? How hard to install? Can someone post a link to a basic unit?

You can set it for 80 degrees but that starts the cabinet temp. I have a 6 rack digital so when I cold smoke I attach a cardboard box with  a dryer vent hose connecting it to where the smoke generator sits. Temp in smoker still gets to 80 degrees except for winter months then it may hit 65-70. I am in Minnesota so usually cold smoke in winter months.

Some have made their own PID if you know anything about electricity. ( It is all greek to me). If you do a search on this site you should be able to check them out.

The smoke generator it self will get cabinet too hot for smoking cheese without ICE in it. That is why most use a cold smoke adapter, either one from Bradley or one that is custom built.
