Title: Smoking Chicken legs with backs attached
Post by: SmokenGrams on August 25, 2020, 08:02:55 AM
Good Morning - I want to smoke Chicken Legs with the thighs attached using the maple syrup/salt
recipe that is found in the Bradley Smoker cookbook that came with my smoker.  Unfortunately, the
book is at the cabin - could someone please share the recipe
with me.  Thanks so much!!!

3 lbs. chicken
1/3 cup maple syrup
1/3 cup Sifto quick cure

Mix ingredients and spread on chicken.

Place on oiled rack.
preheat smoker to 220.
Smoke for 4 to 5 hours, brushing with maple mixture every 2 hours.
smoke generator can be turned off after 3 hours if desired.
If chicken is on separate racks rotate halfway through cooking.

Hope this helps but sounds like it will be kinda salty to me.

Yes it does - If they are smoked through to eating temperature, I should be able to reduce the salt.
