Title: Scallop hor d'ourves

A week ago I smoked a pile of scallops for 1 hour at around 210 F using alder pucks. part of that pile I used in karencooks recipe for scallop fettucini which turned out great btw. The rest I froze untill another inspiration hit.

I wrapped some of them with that precooked bacon today and microwaved them 30 seconds to take the chill off. GREAT taste

In the past we have wrapped the raw scallops with uncooked bacon and either grilled or broiled them. Since these were already fully cooked in the smoker I didn't want to overcook them. I am not a big fan of those prepared foods but in this case I had some great hor d'ourves with little effort and time.

You really should try them soaked in maple syrup and LOTS of garlic over night,than toss em the smoker for around 1 1/2 hrs to around box temp of 220.................serve with "air"(nothing) just great pcs of candy they turn out to be
