Title: Another First Smoke

Did a couple of Cornish Hens yesterday.  Garlic butter stuffing and EVO on one and a commercial rub on the other. Three hours, great groceries.  Everything worked as advertised and the birds were delicious.  Turkey this weekend!

Just replied to this on another string.  Congrats on the success.  I have never smoked cornish hens.  Does the skin turn to rubber like on chickens?  Also, exactly what is EVO?

I suspect EVO was meant to be EVOO (extra virgin olive oil)

No the skin was crisp and very nicely browned.  I've never seen EVO as EVOO.  My hero Emril calls it EVO as does Rachel Ray,  but yes, its extra virgin olive oil.  I believe the chefs simple refer to it as Extra Virgin Oil, but I've been wrong before.
Turkey breast tomorrow.  BTW, I thought I posted this here, but couldn't find it so I did it again!  I guess I did it on another thread. Oh well.  Got my ET 73 yesterday.

Well just setting here getting hungery, ordered my bradley original smoker two day ago.
Nice job on the game hens.
Did you rub the skin with evo?
What other spices did you use? just taking notes so when the smoker gets here i can be ready.
