Hey there folks...

I hope this question doesn't get me banned from my home state of Texas, but has anyone ever smoked fois gras?

Got my hands on a couple of beautiful lobes this weekend, and the idea just kind of crossed my mind...

God Bless you, Joe.  I am at the stage where I have just about convinced my wife that our first smoker should cost approx. $400, instead of the $80 Brinkmann I stupidly recommended a week ago.  (I didn't start doing my research auntil after a week ago!!)

I am a fois gras (Foies Gras in French, please, I know....) lover.

I'd love to see how people have fared with Fois Gras infused with, perhaps, some cherry smoke.  (I've also been trolling for smoked Prime rib recipes.) My wife loves Prime Rib, so I have promised the moon and stars with her favorite dish......

Well just thought I would provide an update...

I tried it out this weekend, cold smoking a few scallops of fois gras.

Used a combination of apple and pecan for about 2 hours of total smoke time.

Served them sliced with some beef tenderloin...all I can say is it was a huge hit.
